The Start of a New Week

Hey everyone!

I know that I don't have much to say this time, so I will just make this one a short posting.

Mike has been sick for the last few days. He spent most of the time in bed sleeping, and some reading, but each time he would move, he'd feel worse. I'm seeing signs of improvements, though I am sure that I'll end up jinxing it as soon as I post this! =S

This afternoon, Mike saw me go towards the kitchen and had asked me what I was going to make. I wasn't going to make anything, to be honest, but I asked him what he would like me to make. His reply was simple: "I want you to make more of that cake."  Mind you, he's referring to my Spiced Zucchini Cake, which really is quite tasty. We only have two small pieces left! His comment to me after continual helpings was that it tastes so good, and it's moist, from scratch, and not from a box or store. I did have to laugh and smile that he likes it so much, and everything he said is completely true! I have a feeling that I may be making this cake more often!!




As promised, I finally grabbed some pictures of our new tree with my phone, as I was multitasking. Our tree finally started to bloom! I can't wait to see them completely open up even further than they have already! It's exciting to see something take off where other plants have withered up and died.

I also have big plans for the rest of our yard. Not so much on the grass front, as we have talked about getting someone to either survey the yard to restore it, or just spending the money to have it Xeroscaped. I keep pushing for the latter, just because it would save money in the long run, but we'll see. I am planning on making another venture out to a Lowes to look at paint for the outside, as well as buy another pot for my indoor Aloe Vera, and the soil for the garden. There is a lot to do this summer...I just hope that I have enough time and/or energy!

I spent last night trying to order a surprise for Mike, but the site's cart was down and I couldn't get the item ordered! I ended up chatting with a live rep in hopes to have the issue resolved. They ended up extending my coupon for an additional three days past the expiration date, which was to expire today, so I was happy with that. I gave the rep a good customer service survey, including their name, and just now, I was able to order it! Yay! The item was free, so that saves me $35 dollars or so, but I did have to pay for shipping, so that was only $9 of money spent. I'll take that over $40 something. I just hope that he likes it! I would tell you what it is, but I can't given the fact that Mike does read this blog too!

Well, I suppose that there isn't much else to say. Mike and I have a games night to go to on Friday, maybe it will just be me, but there will be a games night regardless. I am getting ready to do a hard-core workout with a great friend, and looking forward to it. We took a week off for "spring break", and now we will return to our routine tomorrow morning. I'm going to push myself hard too! I'm planning on bringing some heavier weights than what she has at her place. I'm going to make this happen!

Well, anyways, I better make sure that Mike is doing okay. Maybe next time I will have more to update you all on.

Recipe: Chicken Noodle Soup Remix




Yesterday afternoon, Mike texted me to tell me that he was feeling quite ill and would be coming home early. I had been planning on making my citrus game hens again, but I figured that it wouldn't be much fun trying to eat the meat off of the little bones when feeling sick, so I pulled out some chicken in the freezer, dumped it into a bowl of hot hot water, and started to prepare a chicken noodle soup for him.  This really is a simple and tasty meal, and it's nothing that has to be prepared to the letter, but I will give you what I had used in this instance. Feel free to omit or swap as you'd like!

1 pound chicken breast, cut into pieces
1 tablespoon minced garlic
2 chicken bouillon cubes
4 potatoes, scrubbed and diced
20 baby carrots
1/2 zucchini, sliced into 4s.
1/2 yellow squash, sliced into 4s.
2 Serranos, with seeds, minced
1 cup of noodles
Basil to taste
Water to fill pot

Cut your chicken into bite size pieces and put into pot full of water. Slice and add your choice of vegetables into the pot. Season with your favorite spices. Cover the pot and let simmer on low for 2-3 hours, or until chicken is completely cooked and vegetables are soft. Add noodles and simmer for additional 10 minutes, or until they are cooked thoroughly.

I Can't Believe that it's Saturday!

Hello everyone!

This week has seemed to just disappeared on me! I feel as though it shouldn't be Saturday already. It feels more like a Friday...

Anyways, let's see what I have to update you on. The last time I wrote, I was surprised that I had so much to say, and so recently since my last update. Let's hope that I can do it again! =)

Our tree is growing nicely. I was watering it the other day and there are blooms starting to show as well as some leaves! I can't wait to see it bloomed! I love these kind of trees, and there are none of them in our neighborhood, so it's going to be one of a kind! The tree isn't the only thing that is starting to bloom. My rose bush, and the lilac bushes are starting to bloom as well. I think in the next couple of days, I'll be cleaning out our garden beds that side the walkway to our door, and start planting some wild flowers. I've also picked out a spot for our sunflower seeds, and I am still trying to figure out the ideal spot for the garden. I've got about three to four spots picked out for that, but not 100% sure if that is a good spot or not! I'm so excited that this is getting off the ground this year! I can't wait for the first harvest of the season! Pictures will be coming as soon as I get around to taking them!

Mike isn't doing very well today, and will be coming home early. He switched days off so that he can rest tomorrow too. I hope that he gets better soon! I was going to make a citrus game hen tonight, but instead, I'm going to make a homemade chicken noodle soup to help whatever ailment he has.

I finally got some curtains up in our bedroom's bathroom window! I did get frustrated by how stupid the drill doesn't like to work, so I just did it the old fashioned way, after wasting a good 30 minutes struggling. For some reason, the drill doesn't like our walls, the outer walls that is. I had no problems hanging pictures with the drill in the past, but it really hates our exterior walls! So, out came the hammer and nails, and up the curtains went, just in time for Mike to get sick and needing a dark room to rest in. I couldn't find a good color for the curtain, except black, so that is what I had to use. I figured that it would be a good place holder until I could find something better. The stock was limited at the store when I went shopping, and just opted to use the black.

The weather here has been so warm! Yesterday, it was in the 70s, and today, the thermostat is telling me that it is in the 90s, which isn't true, as it is sitting in direct sunlight, but I was burning up all day! I know that most of my hot flashes are due to the Clomid, but still, I turned on the air! I had already changed into shorts and t-shirt, but was still sweating! I know that the air will be turned off, but still, I was happy to feel it!

I'm so close to finishing the dresser, that it is in reach! I know that there is still some work to do to it, but once the sanding is all done, there isn't anything left but staining! I can't wait to see what this piece of furniture looks like once it's all done! Just a little further to go!

Mom had her driveway redone. It looks nice, though she will be unable to drive or walk on it for about 5 days. I was expecting her to take Willow outside to put her hands into the wet cement, but I don't think that is going to happen.

This round of Clomid is not much different than the first time I took it. I think the symptoms have started earlier than before, but I guess I also know what to expect! The hot flashes are annoying, but I can live with it, it's just the nausea involved! I had to force myself to eat something today, just to keep my strength up with everything that I am doing. I'm hoping that it will ease up soon!

Cooking has been an adventure! If you haven't noticed yet, there are a ton of new recipes that have been posted! I made Irish stew with Mike's help last night, and I baked a Spiced Zucchini Cake with Maple Frosting. This is a great dessert! I had a lot of frosting left over, and was eating it up...it was really yummy!

My mom and I got together on Thursday, and she needed to go to the Trading Post inside Garden of the Gods to replace her earrings that she lost when we went to the zoo with Sarah and Willow a few weeks ago. I ended up buying Mike a pound of a variety of fudge and a Bourbon Chocolate Bar. My surprised me by buying me a necklace and earrings to match that I say there, and liked. Those are my birthday gifts, and she kept telling me to remember that she already gave me my presents. I thanked her, and I am planning on wearing them on my birthday, if not sooner if the timing fits.

I told Mike that the next time I go to Lowes or near one, that I'd look at exterior paint colors. The house is in desperate need of painting. We just don't know what to paint it, or when. I figured that I'd grab a random set of colors and have a talk over them with Mike. I might even surprise Mike with re-staining our deck as soon as it is sanded down. I figured that I can start working on that once my dresser is complete. There is so much to do!

I ordered the birthday gifts for the daughter of a good friend of mine, who's birthday is coming up soon. One of the gifts will be for her to wear at her party, so I need to find a time to see her again. I already see her aunt every Monday through Friday, so I'll try and set up another girl's night and give it to her then. I know there is a games night this week, so I'm hoping to go to that. Mike and I had a lot of fun the last time we went, so I am hoping he gets better soon so that he can come with me!

I'm also doing more research on schools in Denver for me. I haven't decided on the one I've looked into already, but I have a feeling that it may very well be the best that is out there to be offered. I'll keep you posted as soon as I find out more.

There might be some prayers being answered here in the next few weeks, regarding Mike and me, so please keep praying! I'm staying positive on this, probably more so than Mike, but he knows the situation better than me, that is, he knows what to expect. Either way, I think we're close!

Well, I guess that is pretty much it. Not much more to say. There are just a lot of projects to finish up and more cooking to do and post! Check out those new recipes! Some of them will knock your socks off!

Recipe: Spiced Zucchini Cake with Spiced Maple Cream Cheese Frosting



I had wanted something good to eat after dinners and both Mike and I had seemed to want something sweet lately, so I went to work, searching new recipes, and found one that I thought sounded amazing and thought that Mike would approve of this one. It's a bit healthier than most cakes, and it's super yummy! I recommend this one! It doesn't take long to prepare, and you'll love bringing this to events, not to mention being able to say that it's from scratch!


Here's the recipe: Spiced Zucchini Cake with Spiced Maple Cream Cheese Frosting


For the Cake:

1 1/4 cups all-purpose flour
1/2 cup brown sugar
1/2 cup sugar
1.5 teaspoons ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1/2 teaspoon minced crystallized ginger (I smashed mine into powder)
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup vegetable oil
1/2 cup applesauce
2 eggs
1 cup shredded zucchini (roughly 1.5 zucchini)

For the Frosting:

4 oz cream cheese, softened
3 tablespoons butter, softened
3 tablespoons pure maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom

2 cups confectioners' sugar

Directions for the Cake:

Preheat oven to 350*. Butter or spray an 8x8 inch baking pan with non-stick spray. Set aside.
In a large bowl, combine flour, cinnamon, cardamom, nutmeg, crystallized ginger, salt, baking powder, and baking soda.
Combine oil, applesauce, eggs and sugars; add to dry ingredients and mix well. Add zucchini; stir until thoroughly combined. Pour mixture into the prepared pan.
Bake at 350* for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.

Directions for the Frosting:

In a small bowl, beat cream cheese, butter, maple syrup, cinnamon and cardamom until smooth and creamy. Add confectioners' sugar and mix well.
Frost cake with icing once completely cool.

NOTES:

If the icing seems on the thin side, just add more confectioners' sugar until you get the consistency that you want.

If you enjoy nuts, pecans and walnuts, both pair well with this recipe. Simply fold them into the batter before pouring into the pan. (1/2 cup is plenty).

If you don't have cardamom or crystallized ginger, just omit them, but they do add a lot of taste to this dessert, so I recommend adding these to your spice racks!

Recipe: Traditional Irish Stew



After Mike and I returned from our honeymoon, I bought a cookbook that is titled, Celtic Folklore Cookbook. We have used this book for so many of our meals. It's not like the food we had back in Ireland, but it's good none the less. Mike found this recipe in the cookbook and asked that I make it for him. How could I say no to that face? =)
Getting the lamb is always the hardest part as I usually miss the truck and all of the lamb has been bought and I have to wait another two or three days, but I get it! I can't believe how much lamb I have had since being with Mike! I'd never had it before, and now, sometimes I crave it!


Here's the recipe: Traditional Irish Stew

3 pounds lamb neck chops, trimmed of fat, bone and gristle (I asked for a 2lb lamb roast and cut it up at home)
2 pounds potatoes, diced
1 pound onions (I had one onion and one leek)
1/2 tablespoon chopped parsley (I used dried and to taste)
1/2 tablespoon fresh thyme (I used dried and to taste)
2 cups water (I think I put in 3 to be safe)
Salt and Pepper to taste

Cut meat into pieces. Peel and slice/dice potatoes and onions. Layer half of the potatoes in a saucepan, then half of the meat and herbs, and finally half of the onion. Season each layer to taste and repeat the process. Pour water over and cover with a sheet of foil as well as the lid. Simmer gently for about 2 hours, occasionally shaking the pan to prevent sticking. Add liquid if it seems too dry, but a good Irish stew should be thick and not like a soup.

Recipe: Cheesy Bacon-Jalapeno Roll-Ups



First, forgive me for the lack of a picture of the actual appetizer, as they were all gone before I could get a hold of a camera! I made these for two different games nights and they were a big hit! I am still in shock over how quickly these disappeared! They are perfect for any party or get together, and people will be asking you for the recipe!


Here's the recipe: Cheesy Bacon-Jalapeno Roll-Ups

8 strips of bacon, cooked and diced
8 oz cream cheese, softened
1 jalapeno, minced
1 cup shredded Monterey Jack Cheese
1/2 cup sliced scallions
1/2 teaspoon each ground cumin and coriander
Salt and Pepper to taste
6 flour tortillas (6 inch)

Cook bacon in a saute pan over medium high heat until crisp. Transfer to a paper-towel lined plate and set aside. Reserve drippings in saute pan.
Blend cream cheese, jalapeno, Jack cheese, scallions, cumin, coriander and bacon in a bowl with a mixer on medium speed; season with salt and pepper.
Spread about 1/4 cup cream cheese mixture on one side of each tortilla all the way to the edges. Roll up tortillas and fry*, seam side down, in batches, in saute pan with drippings, over medium heat until browned; about 5 minutes. Slice tortillas into thirds; serve with pico de gallo, sour cream or guacamole.

Note*: Instead of frying them in a pan, you can bake them in the oven to lessen the calories. Bake them at 450* for 10 minutes.

Recipe: Avocado Dip



I love dips! Dips or salsas, I am a huge fan! When I found this recipe for an avocado dip, I thought that it would be a good one for both Mike and me, especially since it was around Superbowl day. However, Mike isn't a huge fan of it, but eats it anyways. I'm still working on making it more avocado-y and less sour creamy. I think it's good and is a nice change of pace from our normal salsa dip that we have.

Here's the recipe: Avocado Dip

2 avocados; halved, seeded and scooped (I used about 6 last time, as 2 doesn't seem near enough)
1.5 cups sour cream
1 teaspoon Cumin (I do to taste)
1/2 teaspoon Sriracha or other hot sauce (I add more than this to get more of a kick)
3/4 cup chunky salsa (I use medium)
3/4 cup shredded mild cheddar cheese, divided use
3/4 cup chopped tomato, divided use

In a large bowl, mash avocados with a fork or potato masher.
In a small bowl, combine sour cream, cumin and Sriracha.
Fold sour cream mixture and salsa into the avocados. Add in 1/2 cup cheese and tomato. Mix well.
Cover mixture, chill 1 hour. Before serving, sprinkle remaining cheese and tomatoes over dip. Garnish with cilantro if desired. Serve with your favorite chips!

Recipe: Cheese Scones




When I wrote out our shopping list and menu last week, we decided to have one of our regulars, Pork roast, sauerkraut and dumplings. Mike proposed that we make 4 times the amount of dumplings, as there seems to never be enough. This is very true, though I have tripled the recipe in the past, and to no avail, we still seem to be missing plenty of dumplings! So I had an idea. I told Mike that I would make some Cheese Scones to accompany any meals that would be missing parts after a day or two, such as our dumplings. He mentioned how unhealthy they would be, but didn't say no. So, I set to work, and I was right. The scones took place of almost every missing aspect of our meals, and even our snacks! I'd say this is a huge hit in the Fahey household!

Here's the recipe: Cheese Scones

2 cups Flour
2 tablespoons Sugar
1 tablespoon Baking Powder
1 teaspoon Salt
1/4 teaspoon Baking Soda
1.5 cups Shredded Cheddar Cheese (I used strong and I used all 2 cups)
1 Egg
1/2 cup Sour Cream
1/4 cup Vegetable Oil
3 tablespoons Milk

In a large bowl, combine flour, sugar, baking powder, salt and baking soda. Stir in cheese. In another bowl, combine egg, sour cream, oil and milk. Stir in dry ingredients just until moistened. Turn onto a floured surface and gently knead 10-12 times. Gently pat out to 1/3 inch thickness. Cut with a round cookie cutter*, or use a glass's lips. Place on a greased baking sheet. Bake at 400* for 15-20 minutes or until golden brown.
Serve hot with your favorite topping, such as butter, honey, or jam, or opt to use it as a great side for any meal!

*Note: For Valentine's Day, make these using a heart shaped cookie cutter!

Recipe: Salmon Loaf


The first time I had thought about making this for Mike, as I was trying to spice up our menu a little by adding some meals that he had not had before, I asked him which he would want, Salmon Patties or Salmon Loaf. He asked me what the difference was, then chose the loaf.

This meal is super easy to make, and is yummy to boot!


Here's the recipe: Salmon Loaf

1 tablespoon Lemon juice (I eyeball it, and possibly end up with a little more than this)
1 egg
1 can or 2 packets of Pink Salmon, with juices. ( I use the packets, though either is fine!)
1 cup bread crumbs or pieces ( I use garlic herb bread crumbs, though real bread is good too for texture!)
1 can Celery Soup
1 can full of milk (after emptying the soup, of course)
Salt (optional) {I don't use it}

Mix all ingredients into a bowl. Put into a greased pan (I use a bread pan). Cook at 350* for 1 hour. Serve with your favorite vegetable.

Recipe: Lasagna



I noticed in my past blogs that I kept talking about how I was going to be making this meal, and post the recipe online, but I never did! Lame! Anyways, here it is...Sorry for the delay!

The last time I made this, Mike took some of the leftovers with him to work, and one of the techs had asked him what smelled so good. He proudly told her what it was, and explained that the recipe is handed down through generations. She asked him to ask me for the recipe. I keep forgetting to give a copy to Mike to give to her.


Here's the recipe: Lasagna


1 pound Italian Sausage
2 big cans crushed tomatoes
12 oz tomato paste
Garlic powder to taste (I use a lot)
Basil to taste
Parsley to taste (add about 2 tablespoons into the cottage cheese mixture)
10 oz Lasagna noodles
24 oz Large curd cottage cheese- cream style
2 eggs
1/2 cup Parmesan Cheese
4 cups mozzarella cheese (shredded or thinly sliced)


Brown meat. Drain grease. Add garlic powder, parsley, basil, tomatoes and tomato paste to meat. Simmer uncovered until thick, about 45 minutes to an hour. Stir occasionally. Cook noodles until tender - drain and rinse.
Combine cottage cheese with eggs, parsley and Parmesan cheese.
Place half of the noodles in a large baking pan or lasagna pan. Spread half of the cottage cheese mixture, then half of the mozzarella, and then half of the meat mixture. Repeat layers.
Bake at 375* for 30 minutes. Let stand 10-15 minutes before cutting into squares.

Serve hot with your favorite garlic bread or side salad!

Busy Beavers See Success!

Hello all!

Who knew that I'd actually be updating this again so soon? I've made such a habit lately in not updating this as often as I'd like to, but I am hoping that it will change this year!

So let me see what I have to update you with...

Last night, Mike and I went to a games night with some great friends, and we had a fantastic time. There were a couple of people that we didn't really mesh well with, but still had a good time getting to know them. We even got to see some people that we haven't seen since our last group date with two other couples. We played some new games, and we've even been invited to one of the woman's daughter's birthday. Her kid is so cute and incredibly smart! This kid has some sass, I tell you! =)  I am still needing to figure out what to get her, but I think that I'm going to settle on the telescope, as the mother had said that she is loving looking at the sky at night. I can even teach her a few things! I'm excited!! Can't wait but I have to as it is in April...

A few days ago, my mom and I went shopping, and I ended up going on a little shopping spree at Lowes. For some of you, you may remember in the corner of our lot, there were three very dead bushes...well, no more! I dug them up, with a little help from Mike when I got tired of trying to get through compact clay, and we planted a beautiful (or soon to be when it blooms) Yoshino Blooming Cherry tree. I love these trees! I can't wait to see the blooms! It's already starting to grow and bud a bit too! This tree is known for growing quickly, so I am looking forward to seeing it! I'll post some pictures as soon as it happens!

I also finally bought my garden bed! I still need to assemble it, and buy all of the soil for the bed and the extra huge pot for the tomatoes, but I'm excited to get this project up and running too! All of my seeds need to be planted in April, which is only another week, but this is going to be a great summer! A lot of the seeds that I picked up are things that Mike and I go through a ton of, such as onions, tomatoes, basil, peppers (all of them, jalapenos, cheyenne, green, etc), broccoli, squash, asparagus and more! I really am looking forward to doing this! I foresee the rest of my family asking for some too! Again, I'll get pictures up as soon as I assemble the beds and get things planted! I also got a bag of wild flowers, but I'm not sure when I'll be planting them. I also don't remember which flowers I planted last year are going to come back this year...guess we'll see.

Some of you may recall that I had started working on my antique dresser last year with my mom. We stripped seven layers of paint of off this piece of furniture, and it needed to be sanded down and stained. I started working on the sanding a couple of days ago. I only have a little bit more to do before I can begin the staining process! It's looking amazing too, I must say! Why anyone would paint over something this beautiful, is beyond me! I think those people are crazy!!

Allergy season is here, and I'm hitting the loratadine (Claritin) bottle hard! Because we had a very mild winter, we're due to have a horrible allergy season! I'm believing it with each day that passes! It's insane to me! Of course, not everyone is allergic to the world, but still...I wish that it would ease up or something! I had to cancel a workout one morning due to the fact that I had bust a blood vessel from sneezing so many times! I don't know where I'd be without Claritin! I'm not alone either! There have been a ton of people that I know who've made similar comments on Facebook...it didn't help that I had a ton of sawdust up my nose either! =)

I have found a carbonated drink that I can have that won't cause me to get sick! If you recall, I don't drink soda anymore. I get sick even having a little bit! If I do have some, say cream soda, I have a tiny glass, and it takes me about 7 hours to finish it...but I have found out that sparkling water is safe! I know that it is water, and it has some similar ingredients as soda, but for some reason, I don't get sick! I've come to find a lot of different brands and flavors that are really good. Growing up, whenever my family would make a drive around the lake and we would make a stop at the Wine Store to get a drink, I'd always ask for a Clearly Canadian, which is a sparkling water drink that is difficult to find these days, but I loved those drinks! I think I had to have made my parents wonder what kind of kid I was as I didn't seem candy driven either. I'd choose the fruits and vegetables over the chocolate bars...I can only hope that my kids are the same.

I have been doing a lot of reading on Clomid and the success stories. I was telling Mike this afternoon how many stupid people there are out there when it comes to this. I am not sure if these people are talking to their doctors or what, but there were a lot of people who assume this medication is going to get them pregnant. Um, no...it's an ovulation drug...it helps you ovulate, not get pregnant. That is a good side effect...haha =).  The more I read about it, the more at ease I become. Not that I was freaking out or stressing about being on the medication, but still. After reading a lot of success stories, I get more excited. I am making Mike rather nervous though. Probably about 90% of the success stories are of people getting pregnant within their first dose of the medication and getting pregnant with twins or triplets.  I like to tease him by saying that we'll have all three of our kids in one shot. He looks at me with fear in his eyes, but I laugh and said that I'll be happy with healthy babies, no matter how many come in one shot...which still makes him nervous, but he agrees with me. I've told him that maybe I'll photoshop our ultrasound picture to make it look like we are having high multiples, but he said that was a twisted thing to do, as he laughs about it. (And no, we don't know anything...yet.)

One of our friends online is in the middle of his auditions for the show The Voice. I am not sure how far he has gotten yet, but I know that his audition is for next season, not this one. Mike had said that it would be fun to watch him, and support him, and I've asked him numerous questions as to what songs he is going to be performing, and I know one of them. One is a Matchbox Twenty song, I believe, if I am remembering correctly, and the other is a John Mayer. I'm not a fan of John Mayer, so I didn't know the song. This guy has met Taylor Hicks, who won American Idol a few years ago, and Taylor did mention to our friend that AI is rigged. Finding out that it is rigged, no matter how many times you assume it could be, it makes you wonder if all of the seasons have been this way...who knows, but I hope him all of the best in his dreams! I think we could all take notes on this...follow your dream, as you never know until you try!

There will be several new recipes coming up! I've already posted one so far, but I have a few that I am going to be making this week! I still need to make the acorn squash, but I told Mike not until we conceive...=)    I'll also be making the avocado dip again, so I'll be sure to double check to make sure I haven't already posted it, though I don't think that I have. There is also some Oatmeal Chocolate Chip cookies, Spiced Zucchini Cake, Garlic Cheddar Chicken, and much more! This is going to be a fun week in the kitchen! I really wish my cookbook magazines would show up more frequently, but I guess that I'll just have to deal and make everything!

I bought some curtains for a couple of windows. One of them is a small window in our bathroom in our master bedroom. Our bathroom is open in the room, and if Mike is trying to nap or even sleep in on his days off, it's tough as the light comes through that small window, so I bought one for that window. The other window is right behind our TV. When the sun starts to set, it blinds us if we are watching a movie or show. I picked a nice curtain rod which matchs our decor and some curtains that match our color scheme. I just need to hang them up...of course, that in itself will be challenging as I think it may just be me doing it...I'm sure that Mike will help if I ask nicely! =)

I was noticing the other day that we have several nails in our walls throughout the house, and nothing to hang on them. Mike and I have made comments about printing my work to hang throughout our house. I've mentioned to him a day or two ago that we should figure out which ones we would like to have around the house, and get them ordered and framed. It will be a project to do, of course, but I'd like to see my work hanging in each room. I know that I have my work cycling through our digital frame that his parents got us for Christmas a couple years ago, and we love it! I also have the adorable picture of Willow that I took of her at the zoo, framed and sitting on our mantle. Mike jokes about telling people that she's ours if they ask, and I smile and shake my head. I do foresee and lot of pictures of our kids when we get to that point. I have so many cute ideas in my head of pictures for newborns! I can't wait!

Mike should be finishing up at his massage appointment right now, and I that we will be playing some games and getting something to eat. It will be a fun weekend! Maybe I'll get him outside and walking around...but I'm not sure.

So I think that's everything. I actually had a lot to update than I thought!

Crumb-Coated Cod and Chips




Mike had bought a lot of cod lately...we usually use it in the Baked Cod and Bacon recipe, but this time, we thought that we would try something different for a change. Mike loves fish and chips, and mentioned that he hadn't had it in a long time, so I dug out a pack of them, and set to work. This is a really simple and easy easy meal to make. It didn't take me long at all!


Here's the recipe:

2 Tablespoons vegetable oil
2 Tablespoons water
1 envelope Italian salad dressing mix
2 Cups crushed stuffing mix (I used garlic & herb bread crumbs)
4 cod fillets (I cut mine in half, so I had about 6)

In a shallow bowl, combine the oil, water and dressing mix. Place the stuffing (bread crumbs) in another bowl. Dip fillets in the salad dressing mixture, then in stuffing. Place on a greased baking sheet. Bake at 425* for 15-20 minutes or until fish flakes easily with a fork. Serve hot with your favorite chips/fries*.

*Note: I picked up these amazing sweet potato fries. I believe they are julienne fries with chipotle seasoning...they are truly amazing and I recommend you try them!

Dr. Suess, Shakespeare/Sting, and Me, Oh My!

Hello everyone!

There is only going to be one apology this time. And that is for the last post, which has been deleted. It has come to my attention from numerous wonderful people in my life that I had apologized too much and needed to stop. I know that I have this bad habit of accepting blame and apologizing profusely, even when I am not at fault. I am working on that. Mike can attest to how I've gotten better, but as I said, this is a bad habit that has been ingrained into my very being since a young age, as I was blamed for a lot of things as I was growing up, most of which were not even my fault, and I just instinctively do it. So, with that said, let's move on.

Dr. Suess had once said that "The people who matter don't care what you say, the people who don't matter, care what you say." I think this is very true as it applies to not just my friends and perspective friends, but my family as well. I grew up trying to impress my family, and realized that I don't need their approval or acceptance; the same is true about friends.

I don't remember if it was Shakespeare or Sting who said," The more things change, the more things stay the same." I used this quote years ago to describe my tragic flaw...my inability to change. The more I get to know other people, the more I realize that it's every one's flaw. People sometimes don't think things through before acting or talking it out, and more times than not, they refuse to accept their faults and wrong doings, and usually, people get hurt. The change, when it does happen, isn't like an explosion or some sort of big change that you'd notice immediately. If anything, those changes are small, and it will take you a little bit to realize it, but when you do see it, you feel a world of difference.

The one thing that I liked in my deleted post, was my paragraph on communication. Communication is still a high priority for me in any relationship and the reasons are simple. In order to have a happy and healthy relationship with anyone, you have to have those difficult conversations, no matter how trivial they may seem. Mike and I have been able to discuss everything and anything, no matter how uncomfortable we may feel, how awkward, or how scared we are of how the other person will react. In the end, we have set a strong foundation that the relationship will thrive on. Without communication, in any form, and you'll have many rough patches, and sometimes they are irreversible. For me, no matter the form of relations you have with people, you should be able to say how you feel, what you are going through, and what you are thinking freely without fear of repercussions in your opinion or feelings, and sometimes, you just need to agree to disagree and move on, without holding grudges. Life is too short to be angry and bitter, and I've seen what this can do to people, and they are still that way...sadly, most of those people are in my family.

The last thing I want to mention before I update you on the rest of my life, and I will say that once this is out there, I'll not mention it ever again. It came to my attention last night that I needed to be a good friend, in order to keep good friends, and I wasn't told by the person that it should have come from, but that doesn't matter anymore. When I first read that comment, I was angry, hurt and upset, but not anymore. The thing that I came to terms with, is that if they believe that, fine, but I did everything humanly possible and as much as any good friend would try to do in trying to communicate and find out what the problem was and work things through. Again, none of this matters to me anymore. But I think what hurt the most was not knowing what happened. I woke up this morning realizing that honestly, I didn't do anything wrong. I wasn't talking about that person in my blog, and for whatever reason they had for not asking me, or for how they perceived the blog posts, the relationship ended on a sad note. That's okay though, really. Things happen for a reason, as I am a firm believer in that. I think that we were friends when we needed to be there for each other during some rough times in our past, but who knows what plans God has for this. All I know is that we have made our choice, we're moving on, we've wished each other the best for the future, and I'm ready for the next chapter in my life, drama free. I want to surround myself with people who are not afraid to tell me their honest feelings and opinions, and vise versa, and that wasn't happening recently. I'm no longer upset or pissed off, in fact, I woke up feeling different, in a good way. Today is a new day, and it's time to start fresh. I do wish you and yours all of the best, regardless of how things ended between us, and I hope that you understand and believe me when I say that I truly am not angry or bitter. Maybe this really is for the best and I hope that you have a fantastic future with your family and all of the cute little ones that come around!

So, as I said, today is a new day. It's time to start fresh and move forward.

Working out has been a challenge most days with Ana and her cousin, Aurora. I've been pushing myself even harder, and I can feel a difference. I know that Mike says that he sees a difference, and that motivates me even harder to continue forward! I am looking forward to the transformation!

This morning, I wasn't feeling 100%, but I still got up and headed over to work out. The P90X yoga disc is quite boring and we don't like it because it's not really yoga, and it's the same things over and over again, slowly adding one more move every twenty reps of whatever it is that we are doing. So this morning, I brought over two different pilates workouts on top of the P90X, just so we had options. We did a pilates workout, and I could tell that I hadn't worked those muscles out in a really long time.

Last week, Mom, Sarah, Willow and I went to the zoo. Willow fed the giraffes, the birds and even got to play at the playground. She tried to feed the peacocks too, but we wouldn't let her. She was so fascinated with the Merry-go-Round, that we took her on that, but once she was situated on the horse, she wasn't so sure about being on the ride.







After the zoo, I had gone home and worked on the pictures that I took. Turns out, I took more photos of Willow than I did of the animals! There was one photo that I fell in love with of Willow, I edited it and then went and bought two identical frames and made copies of this photo for me and my mom. It's a great shot, and it will be going onto our mantle, and into my portfolio!



On Wednesday, I have to go get some labs drawn, to make sure that the medication that I was taking earlier in the month has been working. I'm a bit nervous, and anxious, and at the same time, I am trying to keep level headed, and not stress out about it. I'm sure that things are going to be fine, and it's just going to take a little bit of time, if we are not successful this month, though I am hoping that it will be. We are so ready to have little ones running around the house, and I'm ready for all the adventures that will ensue!

The wind has been crazy here lately! The weather is a bit on the bipolar side again, as we had some snow a couple days ago, followed by warm days of 70* and then today has been crazy windy! I'm hoping that Spring comes sooner rather than later, and of course, with warmer weather means mowing the weeds. I'm hoping to get the supplies for the garden, so we can make the deadline on that this year, as well as a tree and some flowers to plant. Mike and I have discussed the idea of Xeroscaping our yard, taking out all of the "grass"/weeds and who knows, maybe we will have that happen in the next year or so. We still need to paint the house too...and perhaps a fence, but we need to see about funds first! These things are crazy expensive! Do it yourself?...I did it once, I could do it again if I had to, though I'd rather not! ahaha!

Mike has been getting much better with his shoulder. There are still some motions that he is limited in his ability to do them, but overall, he has made some amazing progress! I'm very proud of him for getting this far along! He tried to call the ski pass people to explain that he hasn't been able to use his pass this whole season, but they wouldn't let him refund it. They told him he needed ski insurance. There was a woman that he worked with who got a refund because of maternity, but we are not sure if she had the insurance or not...either way, I think it's silly that they refused him the credit.

I made some cheese scones the other day, and Mike has been pretty good about not demolishing them, as he would normally! We still have some left, much to my surprise! Mike found a recipe for an acorn squash, and I told him that I could give it a shot and see how he likes it. The recipe is in my Irish cookbook, and I was reading some of the folk lore on the squash, and started laughing. I told him that we couldn't prepare the squash until we conceived. Apparently, this squash will not only keep your house protected from lightning, but also safe on dark roads, and happy in love and fertility! Maybe we should have done this sooner?


So with all of that said, I will try to update again as soon as I have more things to say! Hopefully, I'll be able to get even more pictures of Willow up online.
