Recipe: Avocado Dip



I love dips! Dips or salsas, I am a huge fan! When I found this recipe for an avocado dip, I thought that it would be a good one for both Mike and me, especially since it was around Superbowl day. However, Mike isn't a huge fan of it, but eats it anyways. I'm still working on making it more avocado-y and less sour creamy. I think it's good and is a nice change of pace from our normal salsa dip that we have.

Here's the recipe: Avocado Dip

2 avocados; halved, seeded and scooped (I used about 6 last time, as 2 doesn't seem near enough)
1.5 cups sour cream
1 teaspoon Cumin (I do to taste)
1/2 teaspoon Sriracha or other hot sauce (I add more than this to get more of a kick)
3/4 cup chunky salsa (I use medium)
3/4 cup shredded mild cheddar cheese, divided use
3/4 cup chopped tomato, divided use

In a large bowl, mash avocados with a fork or potato masher.
In a small bowl, combine sour cream, cumin and Sriracha.
Fold sour cream mixture and salsa into the avocados. Add in 1/2 cup cheese and tomato. Mix well.
Cover mixture, chill 1 hour. Before serving, sprinkle remaining cheese and tomatoes over dip. Garnish with cilantro if desired. Serve with your favorite chips!
