Recipe: Guacamole Salad with Cumin-lime Vinaigrette




After Mike and I moved into our new place, and once most of the unpacking was finished, it was time for us to head to the store and do some much needed grocery shopping, plus some extras. In my attempt to try and find something new to make, and was something a little more on the healthy side, this was one of the winners.  We both loved the ingredients that were required, and we always had a nice supply of them anyways, so there was no reason not to make it. It was light, and tasty, even though I did things a little out of order. Next time, I'll pay special attention to the order of assembly.
This also makes for a great lunch too!


For the Vinaigrette:

2 Tablespoons fresh lime juice (because the store had no limes, I used bottled instead)
2 Tablespoons red wine vinegar
1 Tablespoon chopped fresh cilantro
1 teaspoon minced garlic
1/2 teaspoon ground cumin
3 Tablespoons olive oil
Salt and pepper to taste

For the Salad:

2 Beefsteak tomatoes, sliced
1 avocado, sliced
1/4 Cup thinly sliced red onion

Whisk together lime juice, vinegar, cilantro, garlic and cumin in a small bowl. Drizzle with oil while whisking, then season with salt and pepper.
Arrange tomatoes on a large platter. Drizzle half of the vinaigrette over the tomatoes; top with avocado and onion.
Season salad with salt and pepper, then drizzle remaining vinaigrette over salad.
