For the house warming party, I wanted to make sure that we would have enough food to go around. I didn't realize that I would be making so much food, that Mike and I would have to eat most of it. When I found this recipe, I thought that I would like it...I loved it! My mom even liked it! This was a cinch to make, and everyone seemed to really like them. After looking at the ingredients, I was laughing, as I thought that I would have to add some potatoes into the dip...guess not.
Ingredients:
16 ounces sour cream
16 slices (12-ounce package) bacon, cooked and crumbled
8 ounces sharp cheddar cheese, shredded (about 2 cups)
1/3 cup thinly sliced scallions or chives

Combine all ingredients in a medium bowl.
Refrigerate for at least one hour before serving to allow flavors to meld together. Garnish with extra shredded cheese, crumbled bacon, and chopped chives. Serve with your favorite potato chips or pretzel crisps. Dip can be stored in an airtight container in the refrigerator for up to 1 week.
