Recipe: Cheesy Bacon-Jalapeno Roll-Ups



First, forgive me for the lack of a picture of the actual appetizer, as they were all gone before I could get a hold of a camera! I made these for two different games nights and they were a big hit! I am still in shock over how quickly these disappeared! They are perfect for any party or get together, and people will be asking you for the recipe!


Here's the recipe: Cheesy Bacon-Jalapeno Roll-Ups

8 strips of bacon, cooked and diced
8 oz cream cheese, softened
1 jalapeno, minced
1 cup shredded Monterey Jack Cheese
1/2 cup sliced scallions
1/2 teaspoon each ground cumin and coriander
Salt and Pepper to taste
6 flour tortillas (6 inch)

Cook bacon in a saute pan over medium high heat until crisp. Transfer to a paper-towel lined plate and set aside. Reserve drippings in saute pan.
Blend cream cheese, jalapeno, Jack cheese, scallions, cumin, coriander and bacon in a bowl with a mixer on medium speed; season with salt and pepper.
Spread about 1/4 cup cream cheese mixture on one side of each tortilla all the way to the edges. Roll up tortillas and fry*, seam side down, in batches, in saute pan with drippings, over medium heat until browned; about 5 minutes. Slice tortillas into thirds; serve with pico de gallo, sour cream or guacamole.

Note*: Instead of frying them in a pan, you can bake them in the oven to lessen the calories. Bake them at 450* for 10 minutes.
