Recipe: Lasagna



I noticed in my past blogs that I kept talking about how I was going to be making this meal, and post the recipe online, but I never did! Lame! Anyways, here it is...Sorry for the delay!

The last time I made this, Mike took some of the leftovers with him to work, and one of the techs had asked him what smelled so good. He proudly told her what it was, and explained that the recipe is handed down through generations. She asked him to ask me for the recipe. I keep forgetting to give a copy to Mike to give to her.


Here's the recipe: Lasagna


1 pound Italian Sausage
2 big cans crushed tomatoes
12 oz tomato paste
Garlic powder to taste (I use a lot)
Basil to taste
Parsley to taste (add about 2 tablespoons into the cottage cheese mixture)
10 oz Lasagna noodles
24 oz Large curd cottage cheese- cream style
2 eggs
1/2 cup Parmesan Cheese
4 cups mozzarella cheese (shredded or thinly sliced)


Brown meat. Drain grease. Add garlic powder, parsley, basil, tomatoes and tomato paste to meat. Simmer uncovered until thick, about 45 minutes to an hour. Stir occasionally. Cook noodles until tender - drain and rinse.
Combine cottage cheese with eggs, parsley and Parmesan cheese.
Place half of the noodles in a large baking pan or lasagna pan. Spread half of the cottage cheese mixture, then half of the mozzarella, and then half of the meat mixture. Repeat layers.
Bake at 375* for 30 minutes. Let stand 10-15 minutes before cutting into squares.

Serve hot with your favorite garlic bread or side salad!
